Objective:
Investigate methods for isolating grain sorghum lipids for industrial and food applications. Investigate the use of the lipids as supplements for improving human health and as food additives to improve food quality and functionality of sorghum flour.

Approach:
Investigate methods for isolating grain sorghum lipids. Characterize lipid chemistry and functionality. Characterize sorghum lipid functionality in food and industrial products.
