Objective:
Develop process and products consisting of pastas and noodles contianing 1-10% soluble fibers. These products should have beneficial glycemic properties and have acceptable sensory quality.
Approach:
ARS will test formulations of soluble fiber and provide formulas to the cooperator. Cooperator will develop extrusion processes to produce acceptable pastas and noodles. Documents NFCA with CA Wheat Commission. Formerly 5325-41440-003-10N (12/04).
