Research Project: TESTING POTATOES AS AN ANTIOXIDANT SOURCE AND POTENTIAL HYPOTENSIVE AGENT USING A HUMAN FEEDING STUDY

Objective:
To determine whether potatoes containing high concentrations of chlorogenic acid reduce blood pressure.

Approach:
High chlorogenic acid containing potatoes will be used in a human feeding study. 30 volunteers will be recruited and used in a single dose study and a supplementation study. Blood pressure will be measured after potato consumption and blood withdrawn for analysis of antioxidant content. Documents SCA with U. of Scranton. Formerly 5354-21220-002-31S (5/08).
