Objective:
The objective of this cooperative research project is to evaluate the potential of high pressure to inactivate Norovirus and hepatitis A virus within clams.
Approach:
Clams will be contaminated by exposure to either murine norovirus, a human norovirus surrogate, or hepatitis A virus placed in seawater. Whole virus-contaminated clams will be pressure treated by high pressure at Rutgers Food Science Dept. The USDA-Dover laboratory (Dave Kingsley) will extract virus and perform plaque assays.
