Technical Abstract: Successful applications of inclusion complexes to improve isolation and detection of small molecules have made cyclodextrins increasingly popular components in methods of detection. Studies of the effects of cyclodextrins on aflatoxins have advanced mycotoxin detection research. Recently, a capillary electrophoresis (CE) method with heptakis (2,6-di-O-methyl)-Beta-cyclodextrin has been developed for zearalenone in maize, an estrogenic mycotoxin produced by Fusarium fungi with broad potential to contaminate cereal crops. An extensive structure-activity relationship study performed with the developed CE-cyclodextrin method indicated fluorescence detection of zearalenone is related to the size of the cyclodextrin cavity and degree of methylation. Further investigations by fluorescence spectroscopy reveal a complex relationship between modified cyclodextrin structure and fluorescence detection. Intensity of the fluorescence emission of zearalenone in the presence of various cyclodextrins under aqueous conditions is dependent on pH and buffer. The presented study will provide useful information for further applications of cyclodextrins to improve the detection of zearalenone.
