4d.Progress report.
This report serves to document research conducted under a Reimbursable agreement between ARS and the Agricultural Marketing Service. Additional details of the research can be found in the report for the parent project 1265-32000-076-00D, Development of an Integrated Risk Model for Foodborne Zoonotic Parasites in Swine. Trichinella spiralis is a nematode parasite that infects a wide variety of species, including humans. European Union and Russian export markets require the U.S. to test pork for Trichinella prior to shipment. Horsemeat is an important source of human trichinellosis in Europe; therefore the EU requires the U.S. to test horsemeat prior to export as well. This project supports a cooperative program with the Agricultural Marketing Service in which ARS provides training and support to approximately 20-25 meat inspectors each year and supports continuous analyst certification and quality assurance testing for an inspection program in U.S. slaughter plants. The research conducted on this project supports National Program objectives in Food Safety (NP 108). This work supports inspection testing methodology, which is integral to maintenance of export markets. This project is the sole training program in the United States which supports export of pork and horsemeat to the European Union and Russia. Without this testing program which is mandated by the EU and Russia for detection of Trichinae, there would be no export of these commodities.
