Research Project: EFFECT OF HIGH-FAT, HIGH-FIBER AND PHYTONUTRIENT-RICH FOODS ON MACRONUTRIENT ABSORPTION AND EPIGENETIC EVENTS

Objective:
The objective of this agreeement is to measure macronutrient digestibility of pistachio nuts when fed at different doses as part of a controlled diet.

Approach:
This study will be a dose-response, randomized controlled trial. There will be three doses of pistachio fed as part of a controlled diet. The doses will be: 1) zero servings/day (control), 2) two servings/day (56 g), and 3) four servings/day (112 g). The pistachios will be added to the controlled diet with a proportionate reduction of all foods in the controlled diet for the calculation of energy added from the pistachio nuts. Subjects will be stratified by gender and initial BMI, and randomly assigned to a treatment sequence. Each sequence will include all three doses of pistachios. After seven days of adaptation to each diet and dose, subjects will collect urine and feces for seven to ten days.
