Dr. Robert Brackett, NACMCF Vice-Chairperson and Director, Food and Drug Administration (FDA)/Center for Food Safety
and Applied Nutrition opened the meeting at 9:00 am on Friday September 28, 2007. Dr. Brackett and Dr. David
Goldman, NACMCF Executive Committee FSIS Liaison, and Assistant Administrator, Office of Public Health Science,
Food Safety and Inspection Service, delivered opening remarks.
Presentation of Reports
Dr. Uday Dessai, Chair of the Subcommittee on the Determination of the Most Appropriate Technologies for the Food
Safety and Inspection Service to Adopt in Performing Routine and Baseline Microbiological Analyses, reported that
the Subcommittee met and that they worked to fine-tune their understanding of the charge. He explained that since
the charge is large in scope the Subcommittee deliberated to condense the charge so it could be addressed in a
meaningful manner. A number of experts presented information on various new technologies during Subcommittee meetings.
The group's next meeting is planned for early 2008. No action was taken.
Dr. Donald Zink, Chair of the Subcommittee on Parameters for Inoculated Pack/Challenge Study Protocols, reviewed
the main elements of the work charge and reported on the first subcommittee meeting. He mentioned that prior
attempts at this type of project either focused very narrowly on a particular organism or food type, or the
recommendations made were very general in nature. The group plans to develop a unique and comprehensive document
to assist in performing these types of studies. The group's next meeting is planned for early 2008. No action was taken.
Dr. Donald Zink, Chair of the Subcommittee Assessment of the Food Safety Importance of Mycobacterium avium
subspecies paratuberculosis (MAP), presented a draft final report to the Full Committee for consideration
of adoption. Dr. Zink began by mentioning that the group changed the title of the report to "Assessment of Food
as a Source of Exposure to Mycobacterium avium subspecies paratuberculosis (MAP)." The report
title was changed since the group was tasked to specifically avoid the role of MAP as a human pathogen and they
did not make any attempt to determine if this organism is a food safety risk. Dr. Zink led the group through the
document, asking if members had questions. The Committee deliberated with members asking questions and providing
input to the report. A motion was made and seconded to adopt the document as final, with the understanding that
the agreed upon changes would be incorporated, and that the tables would be finalized suitable for publication
(first motion by Dean Cliver, second motion by John Sofos). Dr. Zink thanked the Committee and especially the
Subcommittee members who worked very diligently in developing this report. He also made special mention of Drs.
Michael Collins (University of Wisconsin) and Roy Radcliff (Marshfield Clinic) who attended Subcommittee meetings
providing valuable expert guidance on MAP.
