Reducing Mycotoxins in Food and Agricultural Commodities

The Mycotoxin Research Unit (MTX) develops strategies to minimize the toxins produced by crop- infecting fungi in the field and in storage that reduce commodity quality and yield.

New technologies are developed to detect and analyze mycotoxins in plants and in food and feed matrices.  Determining how mycotoxins are distributed in the environment and their role in plant disease supports research devising means of prevention by identifying the chemical nature of plant resistance and establishing the mechanisms of mycotoxin biosynthesis.
