Dear Helen, 

I would encourage to you incorporate critical thinking and self assessment 
into any activities you do.  Explore with parents WHY they make the food 
selections they do.  I think you will find that many times their selections 
are as much due to stress, time, lifestyle, and depression issues, as they 
are to levels of nutrition knowledge or lack thereof.   Media and advertising 
are responsible for many poor nutrition selections as well.  Work with your 
students to uncover how companies market their unhealthy products to 
unsuspecting consumers- and their children.

Another suggestion is to have your parents conduct experiments with different 
food choices.  What happens when their children have certain healthy foods 
and snacks versus other not so healthy ones?  What is the affect on children 
if parents eat healthier selections?  What is the affect on the parents 
themselves?
