This seminar discussed the public health significance of
Listeria monocytogenes (Lm) contamination of
ready-to-eat products, identified environmental sources of
Lm within the plant environment, provided an overview of the
FSIS guidelines for controlling Lm in small and very small
plants, and discussed appropriate sampling for Listeria spp.
and indicator organisms consistent with the FSIS compliance
guidelines.
