    Cruise Ship's Corrective Action Statement

Item No.: 06
Site: Potable Water-Random E. Coli Sampling
Violation: The same location was used for random samples in April, May, June, September and October.
Recommendation: Ensure that a minimum of four potable water samples per month are collected and analyzed for the presence of Escherichia coli and are collected randomly from locations on the forward, aft, upper, and lower decks of the vessel. Ensure that sample sites are changed each month.

Site: Potable Water-Bunkering Records
Violation: There were several dates in July, August, September, and October where the free halogen residuals and pH from the shore side water supply were not recorded.
Recommendation: Ensure that a halogen residual and pH test is conducted on the shore-side water supply before starting the bunkering process to establish the correct halogen dosage. Record the results of this pretest and have available for review during inspections.

Site: Potable Water-Mineralizer Backwash
Violation: The air gap for the intermediate atmospheric vent on the reduced pressure assembly was not twice the diameter of the opening.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Violation: The records for the whirlpools did not indicate that the water was changed daily or that the filters were backwashed daily.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Recommendation: Ensure that granular filters are backwashed at least daily. Repeat backwashing, if necessary, until the water viewed through the sight glass or discharge point is clean flowing.

Violation: The handles of the service tongs were in contact with the food in three service trays.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (1) In the food with their handles above the top of the food and the container.

Violation: The light cover was cracked in the second unit from the bottom. A work order was in to repair this unit.
Recommendation: Ensure that food contact equipment is maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: The wiping cloth was draped on the edge of the sanitizer bucket.
Recommendation: Ensure that wiping cloths used for wiping food spills are dry and used for wiping food spills from tableware and single-service articles; or wet and cleaned, stored in a chemical sanitizer, and used for wiping spills from food-contact and nonfood-contact surfaces of equipment.

Violation: Several clean bain marie pans were stored stacked, impeding air drying. When separated, water dripped from the pans.
Recommendation: After cleaning and sanitizing, ensure that equipment and utensils are air-dried or adequately drained before contact with food.

Site: Galley-Deck 5 Crew Toilet
Violation: The self-closing door was only a partial door. The outer door was a full door, but not self-closing. The toilet was not currently in use, and the ship was waiting for a new door. This was noted in the previous inspection.
Recommendation: Ensure that toilet rooms are completely enclosed and shall have tight-fitting, self-closing doors which shall be kept closed except during cleaning or maintenance.

Violation: The deck drain below the coffee machine had a heavy accumulation of mold.
Recommendation: Clean the deck drain.
