    Cruise Ship's Corrective Action Statement

Item No.: 08
Site: Potable Water-Production Records
Violation: In the production halogenation logs, there are columns for entering the halogen levels every 4 hours. The column headings are pre-entered with the times - every 4 hours beginning at 0200. The time that production is started and stopped is also entered in the logs. However, if the production start time is in between one of the pre-entered headings, the first reading is entered into the next column and the actual time of the sample is not recorded. On one occasion, the production start time was 0001 and the halogen reading was recorded in the 0200 column. Staff stated that the halogen is sampled and confirmed to be above 2 ppm at the beginning of the production, but this was not indicated in the log.
Recommendation: Ensure that actual time of the first halogen reading of 2.0 ppm or higher is recorded.

Site: Buffet-Crew Buffet
Violation: Some potentially hazardous food, such as cooked potatoes, chicken pie and cooked vegetables that were placed out on the buffet line were not listed on the Time as a Public Health Control Log. A review of the plan indicated that a log was required.
Recommendation: Ensure that all potentially hazardous foods placed out for service an held under time control, are listed on the time log as required by the company Time as Public Health Control plan.

Site: Preparation Room-Vegetable Preparation
Violation: Label remnants were found on a few previously cleaned utensils, making proper cleaning difficult.
Recommendation: Prior to placing utensils in serive, remove the manufacturer's labels.

Site: Buffet-Sidewalk Cafe
Violation: There was a gap along the front edge of the floor of the technical compartment below the microwave.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Bar-Crystal Bar
Violation: In the technical compartment across from the beer tap, there were excess multi-flow hoses from a dispenser that had been removed. Staff stated that the dispenser would not be replaced.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Galley-Dishwash Area (FWD)
Violation: The conveyor glasswasher was posted out of order for the past 45 days. There were a large amount of glassware requiring washing as well. The ship has another conveyor glasswasher in the main galley. The ship is awaiting spare parts.
Recommendation: Repair the glasswasher.

Site: Pantry-Deck 10 Forward
Violation: The right side of the cuber in the upper compartment of the ice machine was lightly soiled.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: One previously cleaned plastic salad bowl was soiled and stored ready for use.

Violation: The interior of one of the potato peelers was soiled. The unit was last used two days prior.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Buffet-Orangery Grill
Violation: Inside the cold unit technical compartment near the fryer, the upper section of the technical compartment on the side nearest the the fryer was soiled with grease. This was noted on both the starboard and port side of the grill.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Provisions-Vegetable Walk-in Refrigerator
Violation: Plastic film remnants were found along at profille strip at the bulkhead-deckhead juncture, making cleaning difficult.
Recommendation: Remove plastic film from bulkheads.

Site: Galley-Deck 6 - Aft Pantry
Violation: Two fluorescent lights on the deckhead in the bar walk-in refrigerator were not operating. There was adequate illumination.
Recommendation: Replace burned out lights.

Violation: Four or five live fruit flies were found near the bread slicer.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.

Violation: One live fly was found in this area. There was no food preparation ongoing at the time of the finding.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
