    Cruise Ship's Corrective Action Statement

Item No.: 06
Site: Potable Water-Distribution System Microbiological Testing Records
Violation: For the tests conducted on 24 July 2008, there were no E. coli results recorded in the logbook.
Recommendation: Water samples collected and analyzed by the vessel for E. coli may be substituted for port water system supplied reports. Ensure that these records are maintained on the vessel for 12 months and available to the VSP for review during inspections.

Site: Potable Water-Cross-Connection Control Program
Violation: The cross-connection control program did not include a list of air gaps. This was noted on the previous inspection.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Bar-Java Cafe
Violation: There was no backflow prevention device on the coffee machine. This was corrected during the inspection.
Recommendation: Ensure that the potable water system is protected against backflow or other contamination by backflow preventers or air gaps.

Site: Galley-Aqua
Violation: Fasteners were missing from the back of the tilting kettles and the underside of the flat-top grill. Peeling sealant was noted on the non-food contact surface of the deep fat fryer. These items were corrected during the inspection.
Recommendation: Ensure that nonfood-contact equipment components such as doors, seals, hinges, fasteners, and kick plates are kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Violation: Three fasteners were missing at the rear of the tilting kettle.
Recommendation: Ensure that nonfood-contact equipment components such as doors, seals, hinges, fasteners, and kick plates are kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Site: Galley-Ginza
Violation: There was peeling sealant on the deep fat fryers and inside the technical compartment under the single compartment sink. A plastic wrap material was wrapped around components inside the technical compartment beneath the pasta cookers. This material is not easily cleanable. These items were corrected during the inspection.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Galley-Aqua Dishwash Area
Violation: A soiled stainless steel ice bucket was stored as clean.
Recommendation: Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Violation: There was a leak in two sections of the deckhead and one of the leaks was dripping to a food preparation counter. There was no food preparation ongoing at the time of the finding.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: There was mold in the technical compartment next to undercounter refrigerator #8. This was corrected during the inspection.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: Coving was missing at the deck-equipment junctures in some sections of the galley.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Violation: The bulkhead at the entrance to the unit was damaged, making cleaning difficult.

Site: Provisions-Fresh Eggs and Cold Cuts Walk-in Refrigerator
Violation: There was a large streak of rust on the bulkhead behind the storage rack. This item was corrected during the inspection.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: A deckhead panel was damaged, leaving gaps, making cleaning difficult.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.
