Intro:
Welcome to USDA's Food Safety and Inspection Service
Food Safety at home podcast series. These podcasts were designed
with you in mind - the consumer - who purchases and prepares meat,
poultry and processed meat, poultry and processed egg products for
your family and friends.
Each episode will bring you a different food safety topic ranging
from safe storage, handling, and preparation of meat, poultry and
processed egg products to the importance of keeping foods safe during
a power outage.

Hello, I’m Dr. Richard Raymond, the United States Department
of Agriculture’s Under Secretary for Food Safety, and I’m pleased
to welcome you to the Food Safety at Home series
of podcasts that are designed with you in mind; you the consumers
who purchase, prepare and eat meat, poultry and processed egg products.
The Food Safety and Inspection Service is USDA’s public health regulatory
agency responsible for ensuring
that the meat, poultry and processed egg products that you eat are
safe, wholesome, and accurately labeled and packaged and while the
Agency has approximately 7,800 inspection and veterinary personnel
in nearly 6,200 slaughter, processing and import establishments on
a daily basis, the consumers also play a significant role in making
sure food is safe to eat.
The Food Safety and Inspection Service uses many methods to reach
out and educate consumers about the importance of safe food handling
and preparation to reduce the risks associated with foodborne illnesses.
These podcasts are yet another new vehicle we are using to reach consumers
and to generate interest and involvement among thousands, and hopefully
millions, of potential new food safety advocates in this important
public health area.
Our broadcasts are meant to be short and fact-based and we’ll feature
food safety and public health experts.
As you listen you’ll hear about topics promoting food safety such
as the need to use food thermometers to check if your food is fully
cooked, and to how to keep food safe during a power outage.
You’ll learn about the USDA Meat and Poultry Hotline and Ask
Karen, our virtual representative who is available to answer
your food safety questions 24 hours a day.
