Why did employment expand in poultry processing plants?

Dietary health studies stimulated a shift in meat consumption from beef and pork to poultry, resulting in strong job growth in the poultry processing industry. This article explores the reasons behind employment growth in poultry slaughtering and processing plants, and explores how this somewhat minor segment has kept employment levels relatively stable in the entire food products industry.
