    Cruise Ship's Corrective Action Statement

Item No.: 02
Site: Medical-Clinical Specimens
Violation: There were no bacteriological agent specimen collection containers.
Recommendation: Ensure that at least 10 clinical specimen collection containers for both viral and bacteriological agents (10 each), as well as the proper shipping containers and labels for same, are maintained by the medical staff.

Site: Potable Water-Microbiologic Monitoring
Violation: The microbiologic monitoring records listed results as Colisure rather than E. coli. There was no indication on the record that a test result was for total coliforms or E. coli. On 11/03/2008 there was a positive sample listed for the deck 4 pantry. When questioned, staff stated that the recorded result was positive for total coliform and negative for the confirmation E. coli test, however the negative result was not recorded. Staff accurately explained the testing procedure for determining total coliform and E. coli. A second sampling at the deck 4 pantry on 11/04/2008 was negative.
Recommendation: Ensure that a minimum of four potable water samples per month are collected and analyzed for the presence of Escherichia coli.

Site: Potable Water-Potable Water Tanks
Violation: An interior coating had been applied to all of the potable water tanks since the last inspection. The documentation for the coating was available for review. There was no indication in the records that the manufacturer's recommendations for application, drying or curing were followed.
Recommendation: Ensure that all manufacturer's recommendations for application, drying, or curing are followed. Ensure written documentation for the recommendations followed are available for review during inspections.

Site: Provisions-Parasite Destruction Letters
Violation: There were several suppliers of fish and shellfish for this vessel and the vessel had a log of parasite destruction letters from each. However, not all of the parasite destruction letters listed the types of fish and shellfish supplied.
Recommendation: If the fish are frozen by a supplier, a written letter from the supplier which specifies the fish species involved and both the temperature to which the fish was frozen and the total time period at that temperature. If the supplier provides any of the same species to the vessel in a fresh state, there shall be some designation on the outer packaging for the parasite-free fish.

Site: Buffet-All
Violation: The sneeze shields on all the buffet lines did not fully protect the displayed foods.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards. Modify or replace the sneeze shields to ensure complete protection the foods on display.

Site: Galley-Terrace Cafe
Violation: There was a gap between the frame of the flat stove and the bulkhead.
Recommendation: Ensure that equipment that is fixed because it is not easily movable is installed so that it is: (1) Spaced to allow access for cleaning along the sides, behind, under and above the equipment; (2) Spaced from adjoining equipment, bulkhead, and deckhead at a distance of not more than 0.8 millimeter or 1/32 inch; or (3) Sealed to adjoining equipment or bulkhead, if the equipment is exposed to spillage or seepage.

Site: Galley-Potwash
Violation: Cleaned items were stored stacked, impeding air drying.
Recommendation: After cleaning and sanitizing, ensure that equipment and utensils are air-dried or adequately drained before contact with food.

Site: Preparation Room-
Violation: There were open seams around the bulkhead access panel and profile strip next to the cleaning locker.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: There was a leak in the potable water line for the combination oven.
Recommendation: Repair the leak.

Site: Galley-
Violation: The blast chiller was posted "Not in Use". Per staff the unit is never used and will not be in the future.
Recommendation: Ensure that only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas. Unnecessary articles/equipment impede cleaning operations and create areas for insect harborage.

Site: Buffet-Beverage Station
Violation: There were three small flies in the drain below the juice machine.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
*Inspections scores of 85 or lower are NOT satisfactory
