Speaker Biographies

John F. Schulz

John Schulz is the Director of Quality Assurance/Program Development for Marriott Lodging International. He is a 13 year employee with Marriott, 9 years of which working within the Lodging Food and Beverage Test kitchens and work teams designing new food products, restaurant concepts and menus to be used within all the Marriott Lodging Brands.

The past 4 years John worked on developing a food quality and safety standards program which has been implemented world wide to all Marriott Lodging brands. It includes a comprehensive HACCP program as well as a Train the Trainer Management certification program and a wordless and culture-less food safety training program designed for the hourly associate.

John is currently developing a paperless, Internet based quality assurance program for total hotel auditing within all Marriott Lodging brands.

He is a graduate of the Culinary Institute of America as well as the University of Wisconsin System. He is an active board member on the Maryland Restaurant Association/Educational Foundation as well as the Maryland Culinary Apprenticeship Committee. He is also involved with the University of Wisconsin, Stout designing an Internet based instructional program for teaching online courses.
