Speaker Biographies
Lydia C. Medeiros, Ph.D., R.D.
Dr. Medeiros is a faculty member of
the Department of Human Nutrition and
holds appointments with Ohio State
University Extension and the Ohio
Agricultural Research and Development
Center. She has BS and MS degrees in
Nutrition from Auburn University and a
PhD in animal sciences from the
University of Wyoming. Dr. Medeiros is
a registered dietitian and is licensed
in the State of Ohio. She has authored
numerous publications in meat
sciences, diabetes, and food safety
for both the lay and professional
audiences. She is often requested to
speak on the topics of food safety for
consumers, high risk audiences and
program evaluation.
