Mediterranean Fruit Parfait
(makes 6 servings)

Ingredients: Nutrition Facts for Mediterranean Fruit Parfait (text version below directions)

3/4 cup 1% milk

small bullet

1/3 cup couscous

small bullet

1/2 cup plain or lemon lowfat yogurt

small bullet

1/2 cup nonfat sour cream

small bullet

1 tablespoon honey

small bullet

1 teaspoon lemon zest

small bullet

1/2 cup strawberries, hulled and sliced

small bullet

1/2 cup fresh blueberries

small bullet

1/2 cup sliced nectarines

small bullet

1/2 cup fresh raspberries

small bullet

1/4 cup dates, chopped

Directions:
1. In a medium saucepan, bring milk to a boiling then stir in couscous. Simmer, covered for 1 minute then remove from heat and let stand for 5 minutes. Fluff with a fork and let stand 1 minute.
2. In a small bowl, combine yogurt, sour cream, honey and lemon zest. Add couscous and mix well.
3. In a separate bowl, combine fruit.
4. Using 6 clear glasses, layer the bottom of each with fruit followed by a layer of the couscous mixture then another layer of fruit.
