Papaya Boats
(makes 4 servings)
Adapted from the 5 A Day Recipe website

Ingredients: Nutrition Facts for Papaya Boats (text version below directions)
small bullet 2 ripe papayas
small bullet 1 cup canned Mandarin oranges, drained
small bullet 1 small banana, sliced
small bullet 1 kiwi, peeled and sliced
small bullet 1/2 cup blueberries
small bullet 1/2 cup strawberries, sliced
small bullet 1 cup non-fat vanilla yogurt
small bullet 2 tablespoons honey
small bullet 2 teaspoons chopped fresh mint (optional)
Directions:
1. Cut papayas in half lengthwise; scoop out seeds.
2. Place oranges, banana, kiwi and berries in each papaya half.
3. Combine yogurt, honey and mint; mix well and spoon over fruit before serving.
4. Garnish with mint sprigs, if desired.
