Diet and lifestyle choices affect health and well-being, as do food safety policies and practices. ERS research examines the effect of economic factorsprices, income, and demographic characteristicsand nutrition education and food policy on food choices and, in turn, dietary quality. In the food safety arena, ERS research is designed to enhance the efficiency and effectiveness of public food safety policies and programs. ERS food safety research focuses on analysis of the human-illness costs of foodborne disease and assessment of food safety incentives and activities of industry, consumers, and government.
