Question: What affects the rate at which salt dissolves apart from 
temperature and stirring?

Two additional characteristics are solubility (how well the particular 
kind of salt dissolves in water), and concentration.  Once the solution 
is saturated (reaches its capacity to take on more salt), no more salt 
dissolves.
