Besides looking a high school or college chemistry book
under redox, you might try a book titled Cathodic
Protection by John Morgan, published by the National
Association of Corrosion Engineers. This second edition
was published in 1987.

I searched the term "sacrificial electrodes" on www.google.com and found a
lot of "hits". One specific application is the protection of underground
iron water mains. You can find details on this application at:
