Bacteria and Jam

Question -   why does bacteria which decays food,  does not decay jam?
what is the science behind  it?

Sugar has osmotic properties.  It is the same as adding lots of  salt.  The 
sugar dehydrates microorganisms and they can't grow.  The  sugar is a pleasant 
side effect!
