Let me rephrase the question: how does Leuconostoc
mesenteroides ferment sugars under anaerobic
conditions? The misspelling of the name suggests that
you haven't taken the trouble to check that this
organism is a member of the so-called lactic acid
bacteria (non-beta-hemolytic cocci). They are normally
heterofermentative and ferment glucose via the
phosphoketolase pathway. Fermentation is an anaerobic
process. Knowing that Leuconostoc belong to the
lactic-acid bacteria, and that they ferment glucose
under anaerobic conditions, you must be able to draw
their sugar metabolism of glucose into lactic acid
