The newest opening at Trinity Groves is a full-service Latin restaurant and tequila bar called DiDi's Tamale Diner, which focuses on Mexican and Central American tamales that combine traditional tastes with innovative flavors. Opening date is November 23 — just in time for holiday tamales.

Tamale ingredients include smoked brisket, spicy pork, chicken and cheese. DiDi's also offers tortas, which are Mexican sandwiches filled with a variety of savory ingredients — barbacoa, pork, chicken — and topped with pickled vegetables. Sides include Mexican rice and three types of beans. There are also dessert tamales and paletas, the Latin American ice pops.

The DiDi's team includes Michael Beck and Andina "DiDi" Fernandez, along with cooks from Mexico. Beck, a portfolio and marketing manager for Gerald L. Ray & Associates, worked with Fernandez 20 years ago. He came up with the concept after eating Fernandez's tamales.

Hailing from Guatemala, Fernandez started making tamales out of her kitchen, selling to friends and family. Once she and Beck teamed up in 2010, they perfected the recipes and added more tamale types.

They originally opened DiDi's in Mesquite three-and-a-half years ago, but they closed that to focus on the opportunity at Trinity Groves.

The dining room at DiDi's Tamale Diner seats 70 to 80 people, and a full bar features tequilas, margaritas, beer and mezcal. Individual tamales are $2-$3.50 each; tamale combos are $9. Tamales also can be purchased to go.
