Bisous Bisous Patisserie Will Bring Fancy French Macarons to West Village
Ten years ago, finding a good French macaron in Dallas was damn near impossible. In the last decade, though, bakeries across the city have been trying their flour-covered hands at the finicky French cookie, to mixed success. It's hard to make a good macaron, but Bisous Bisous Patisserie cranks out what is easily Dallas' best.

Now the beloved bakery is getting a permanent home in Uptown's expanding West Village. Bisous Bisous is known to most Dallasites through weekly appearances at White Rock Local Market and at places like the Design District's Ascension Coffee. Chef Andrea Meyer has been whipping up her famous macarons in Dallas since January 2013, and her crisp-yet-soft macarons quickly attracted the attention of both marketgoers and critics.
The bakery's new spot in West Village will offer Meyer's macarons, in flavors like Tahitian vanilla, toasted coconut and a rotating seasonal option, alongside other traditional French pastry like tarts and eclairs. Meyer first got hooked on French pastry on a honeymoon trip to Paris, then promptly quit her job as a corporate project manager to pursue a culinary education at Le Cordon Bleu.
Meyer went on to hone her skills at Thomas Keller's renowned Bouchon bakery in Yountville, California before moving to Dallas, an experience she credits for her attention to detail and refined technique. If you've ever heard anything about Keller, it is likely that he has exacting standards, something that is extremely important for baking macarons.
Bisous Bisous Patisserie is scheduled to open in January 2015, just two short years after Meyer founded her farmers market-based business. "I can't wait to be open in West Village with my own kitchen," Meyer said in a press release. "It's been our goal since we established Bisous Bisous Patisserie in January 2013 and we're finally seeing it come to life."

If you can't wait until January to sample Meyer's macarons, Bisous Bisous Patisserie is still taking orders in the meantime on their website and through local grocery delivery service Artizone. Maybe if you're lucky you can snag a couple boxes of those impossibly good peppermint macarons, this month's special flavor.
