This week, we are making an easy and delicious breakfast dish, Baked Banana Bread Oatmeal. I have several variations of this dish including raspberries, strawberries and blueberries. This is a perfect winter recipe that will have you and your family enjoying a warm, healthy breakfast!

Easy Baked Banana Bread Oatmeal

Ingredients

  • 3 cups old fashioned oats
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1 cup of milk
  • 1/2 cup butter, melted
  • 1 mashed ripe banana and one sliced banana for topping (you can use any fruit combination you like, or add chocolate chips!)

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine oats, brown sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine wet ingredients: Mashed banana, whisked eggs, milk and butter.
  4. Stir wet ingredients into oat mixture until blended.
  5. Spoon into a greased 9-inch square baking pan.
  6. Bake 40-45 minutes or until set.
