This week, we are making an easy and delicious breakfast dish, Baked Banana Bread Oatmeal. I have several variations of this dish including raspberries, strawberries and blueberries. This is a perfect winter recipe that will have you and your family enjoying a warm, healthy breakfast!

Easy Baked Banana Bread Oatmeal
Ingredients
- 3 cups old fashioned oats
- 1 cup brown sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 2 eggs
- 1 cup of milk
- 1/2 cup butter, melted
- 1 mashed ripe banana and one sliced banana for topping (you can use any fruit combination you like, or add chocolate chips!)
Directions
- Preheat oven to 350 degrees.
- In a large bowl, combine oats, brown sugar, baking powder, salt, and cinnamon.
- In another bowl, combine wet ingredients: Mashed banana, whisked eggs, milk and butter.
- Stir wet ingredients into oat mixture until blended.
- Spoon into a greased 9-inch square baking pan.
- Bake 40-45 minutes or until set.
