100 Favorite Dishes, No. 41: Lamb Burger at LARK

To me burger has always meant beef. The idea that ground up cow could be replaced by chicken or turkey or any other unfortunate animal and the resultant patty still be referred to as a burger is something I've long questioned.

Until I met lamb burger, or LARK on the Park's lamb burger, specifically. One bite of this sandwich and you'll rest assured that fuzzy little lambs can keep up with beef.

The patty is seasoned simply, with a little bit of cumin and some fresh parsley folded into the mix. After it's grilled to a perfect medium, it's topped with a salsa verde and soft feta cheese you could spread like butter. There's a small salad of tomato, young lettuce and house-jarred pickles that bring sweetness on the side. Pick up the whole tangle and pile it on top.

This burger is especially juicy, and as you take bites the smell of fried rosemary, tarragon and sage waft up from a tangle of french fries that still glisten with hot oil. Beef will likely always reign supreme in the world of burgers, but anyone that orders the beef version here is just wrong.

Don't go to Jimmy John's on Hillcrest. Bad food, worse service.
