Leslie Brenner RecommendsOmar Flores is one of Dallas’ most talented chefs, and his tapas at this Trinity Groves hot-spot are absolutely wonderful. I love the all-Spanish wine list, too. This modern tapas restaurant is run by Jonn Baudoin and chef Omar Flores, the team behind Oak Cliff's Driftwood. Flores’ menu spotlights seasonality — “taking classics, putting a spin on them and making them our own,” as he puts it. In the planning? Mussels escabèche presented in a sardine tin and served with faux chicharrones flavored with mushrooms, garlic and shallots.
